自從澳大利亞設計師馬克·福爾克(Mark Folker)的多元化三位一體釀酒師(Trinity One brewer)脫穎而出,已經有大約一年的時間,爲早期的採用者提供了各種複雜的釀造方法。

起源潷水器實質上是一個玻璃pourover啤酒和船隻組合,接受Kalita 155平底,槽紋紙過濾器。如果沒有過濾器保持模塊,單獨的潷水器就可以裝滿750毫升,直到水口正下方 - 這是傾倒葡萄酒的便利能力。在過濾器模塊就位的情況下,容器的容量爲500毫升,或大約一到兩個完成的杯子。

起源潷水器的生產已經在進行中,預計下個月開始發貨。一個Kickstarter的活動的產品已經贏得的資金目標300%以上。Folker表示,如果有需求的話,可能會出現一個更大的Origin版本,以及其他新的項目想法,旨在將加權的Trinity One重力印刷機的一致性和易用性轉移到其他釀造形式。

content | '<p> SCAA美國精品咖啡協會與scae歐洲精品咖啡協會所定義的Gold Cup精杯咖啡比例,必須將咖啡的萃取率抓在20%左右,而TDS大約在1.1%~1.3%間。</p> <p> 針對Drip Filter滴濾衝煮,如何萃取出最佳咖啡風味,控制因素不外乎咖啡粉的萃取物與一杯咖啡中的濃度這兩個變量,而這兩個變量早在1960年即有所謂”Coffee Gold Cup”金盃咖啡理依據SCAE(歐洲咖啡精品協會)定義Gold Cup Standard:”1000ml水,50~60g咖啡粉,92°C ~96°C 熱水衝煮出咖咖啡”。這個咖啡衝煮落在最佳萃取率(Extraction)與濃度(Strength Concentration)的”靶心”位置,即是”Gold Cup”。</p> <p> 首先每顆咖啡可萃取溶出物,最大約爲30%(也就是有70%木質部等無法萃取),即10g咖啡粉最多有3g咖啡溶出萃取物,而一杯美味咖啡,咖啡最佳萃取率即30%咖啡最大可溶出物的60~70%爲最適萃取,那小於60%(18%以下萃取率)即萃取不足,咖啡風味將呈現風味不完整,而大於70%(22%以上萃取率)則過度萃取,咖啡將呈現冤苦辛辣不好味道。</p> <p> 因此咖啡最佳萃取率爲18%~22%。</p> <p> 這18~22%=30%*(60~70%),也就是咖啡最大可萃取率30%,萃取6~7成纔是最佳咖啡風味,爲什麼我不直接寫18~22%,而繞30%中之60~70%,是當我們在衝煮一杯咖啡時,能想象如何從咖啡最大萃取物中,我們們如何萃取那6,7成的最佳風味。也就是說10g咖啡粉沖泡咖啡最大可萃取30%(3g)咖啡可溶出物,但我們期望最佳的萃取物18%~22%(1.8~2.2g)。</p> <p> 另外這些萃取物將溶於多少熱水中,這就是咖啡濃度,最適咖啡濃度落於1.0~1.5%間,小於1.0%輕淡無味,不如喝開水就好,如果太濃厚的咖啡濃度1.5%以上(滴濾咖啡而言),則不好的口感。滴濾咖啡最佳Gold Cup濃度爲1.2%~1.45%。太清淡或太濃厚咖啡濃度均是不好的口感。美式風味:就是濃度比較淡的咖啡,所以一杯美式咖啡他的濃度TDS約落在1.2~1.3%。歐洲風味:一般歐洲咖啡濃度比較濃厚一點,所以一杯歐式咖啡他的濃度TDS約落在1.3~1.45%</p> <p> 所以SCAE(歐洲精品咖啡協會)定義標準Gold Cup靶心位置,與萃取率與濃度關係,即咖啡粉的量有一個相互關係如下:</p> <table align="center" border="1" bordercolor="#dddddd" cellpadding="0" cellspacing="0" style="border: 0px; BORDER-TOP: 0px; BORDER-RIGHT: 0px; PADDING-TOP: 0px; font-stretch: inherit"> 77</p> </td> </tr> </tbody> </table> <p> 從對照表中決定預定咖啡衝煮量及設定咖啡粉量上下限,如何從0~30%萃取率到達18~22%最佳萃取率,同時咖啡沖泡濃度剛好位於1.2%~1.45%,就如如何投出一顆好球。這沖泡一杯Gold Cup咖啡,上述基本粉量與沖泡量決定後,能否達到最佳18%~22%最佳萃取率,同時濃度又落在1.2%~1.45%,涉及到萃取率問題,與咖啡研磨粗細,水溫,過濾介質(影響水停留時間)…等相互變因。</p> <p> 依SCAE衝煮一杯好咖啡控制因素包含下列五大項;不管用什麼方法衝煮咖啡,這五大準則都是必需掌握的。</p> <p> 萃取時間掌握Contact time:應用各種衝煮方法,要在其較佳萃取時間內萃取出18~22%萃取率,重要在控制咖啡研磨度及水溫。</p> <p> 水溫掌握Temperature of the water:92°C~96°C開始衝煮水溫是必需要掌握的,過高或過低初始水溫都可能是不適當。</p> <p> 衝煮過程中擾動咖啡粉Turbulence:擾動是爲了能衝煮出應有萃取率,如塞風攪拌,手沖水柱沖水強度等都是爲達到萃取所必須擾動。</p> <p> 預浸滋潤咖啡粉Wettability:手衝,espresso,美式在衝煮前都有的溼潤階段,這階段溼潤水量爲每公克咖啡粉,2ml水量預浸,浸潤時間約30sec。當然咖啡豆烘焙狀態又有不同預浸溼潤狀態,這部份手衝就可以好好控制了。</p> <p> 均勻衝煮Uniform Dispersion:衝煮過程讓水均勻經過每一顆咖啡粉末,同時從初始到結束一致水溫,水量萃取是重要的,比如espresso強調衝煮水溫壓力一致,手衝穩定的水柱就是這個道理。</p> <center> <img alt="SCAA 美國精品咖啡協會 咖啡沖泡黃金水粉比例 " height="596" src="/uploads/allimg/151024/1P42T0M-0.jpg" width="494" /></center> <p> 咖啡衝煮方法</p> <p> French press法國壓</p> <p> Percolator摩卡壺</p> <p> Drip Filter滴濾</p> <p> Syphon塞風虹吸</p> <p> Pressurised Infusion(Espresso)意式濃縮</p> <p> 至於咖啡粉的研磨粗細:</p> <p> 法國壓:每顆咖啡研磨成100~300顆咖啡粉末,約直徑0.7mm粉末,即約二號特砂糖顆粒大小。</p> <p> 濾泡滴濾:每顆咖啡研磨成500~800顆咖啡粉末,約直徑0.5mm粉末,即約咖啡伴糖顆粒大小。</p> <p> 塞風:每顆咖啡研磨成1000~3000顆咖啡粉末,約直徑0.35mm粉末,即約食品精鹽顆粒大小。</p> <p> Espresson:每顆咖啡研磨成3500顆咖啡粉末,約直徑0.05mm粉末,即約麪粉顆粒再粗一點大小。</p> <p> SCAA標準杯測時咖啡粉研磨,70~75%通過標準篩#20(0.85mm)的均勻度,約比法國壓粗一點。</p> <p> 另SCAE提供咖啡衝煮過程、不同研磨粗細衝煮時間的觀念:</p> <p> 1.浸潤階段Wetting:這時候將熱水放入咖啡粉溼潤咖啡,讓咖啡萃取物溶解,浸潤水量約爲咖啡粉量兩倍,浸潤時間約30sce。</p> <p> 2.衝煮階段Water Cycle:這時因上述咖啡粉末粗細各有不同時間讓水與咖啡粉接觸,並溶出咖啡萃取物。</p> <p> a.法國壓:粉末粗,約浸潤3~5min</p> <p> b.滴濾泡式:衝煮過程約1~3min</p> <p> c.Syphon:衝煮過程約40~60sec</p> <p> d.espresso:三十秒萃取30cc濃縮咖啡</p> <p> 3.萃取後段:這時咖啡已萃取50%以上可萃取物,即將60~70%咖啡可溶出物萃取出來爲最適萃取及調整水量達到最適咖啡濃度落於1.0~1.5%間。</p> <p> 4.萃取後咖啡渣:咖啡渣內含水量約爲原咖啡粉的2倍量(手衝濾泡式)。</p> <p> 一些咖啡磅的重量參考</p> <p> 1.咖啡豆:約6~7顆爲1g</p> <p> 2.Hario Syphon量匙:一平匙8~9g</p> <p> 3.Hario V60量匙:一平匙14~15g</p> <p> 4.咖啡豆(烘焙後):0.38~0.43 g/cm^3</p> <p> 5.咖啡粉:0.44~0.48 g/cm^3</p> <p> 6.一顆18/64″咖啡豆烘焙後長軸12mm,短軸8mm,高5mm半橢球體,有此一說咖啡萃取與表面積有關,上述一顆咖啡表面積1.4cm^2。</p> <p> TDS和George Howell Coffee company所發行的ExtractMOJO。</p> <p> ExtractMojo並不是什麼新概念。他只是延續了SCAE的Gold Cup原理,將該理論與實務操作變得更加便利而已。對很多人來說,這套源自於1960年代就被拿來檢視濾泡咖質量的Gold Cup理論,並不陌生。但是我必須承認,這是我第一次認真地去了解該原理,重新把萃取理論拿出來。</p> <p> Gold Cup架構下的咖啡,必須要維持18~22%的萃取率(Extraction)和TDS約1.3%的濃度(Strength)。這是一個讓咖啡得以平衡詮釋風味的萃取率與濃度關係。一顆咖啡豆大約有30%的可溶解物質(剩下的70%則是無法溶解的結構,包括木質部);而Gold Cup的標準萃取率設定在20%;過低的話則是萃取不足(under developed)造成風味不平衡,過高的話則是萃取過度而產生苦味(Bitter)。Strength的話則意指咖啡裏同可溶解物質被沖刷出來後,佔這杯咖啡溶液的百分比。百分比越高,咖啡喝起來會越濃(strong),反之越淡(weak)。瞭解了這兩個名詞後,接下來,我們就得努力把咖啡衝煮到Extraction=20%和TDS=1.3%的目標。</p> <p> 爲了達到Extraction=20%和TDS=1.3%的這個目標,Gold Cup有一個建議的水粉比,大約是 water: coffee= 17:1。ExtractMOJO方便的地方就在於,你可以固定粉量(ground coffee),衝煮用水量(brew water),或是完杯後的容量(desired yield),三個其中一個參數,來推算剩下兩個應該是多少。比如說說,就是假如你今天要煮出一杯完杯容量是240cc的咖啡,那麼你將該欄位數字填入後,ExtractMOJO就會建議你使用271.69ml的水,搭配上15.19g的咖啡粉來進行(軟件會預估咖啡粉的平均吸水)。先固定水溫(假設205F),沖泡後量取該杯咖啡的TDS值,再輸入該軟件,得到衝煮咖啡的落點區間後,進行修正。假如TDS過高,你可以將粉調粗,或是縮短萃取時間;反之亦然。跟着數據多做幾次,很快就可以抓到你的Gold Cup衝煮參數。</p> <p> 當然,假如你想要咖啡濃一點(stronger)或是淡一點(weaker),也可以調整設定。調整後,衝煮參數也會跟着跑。這就是ExtractMOJO便利的地方。你不需要用電算機算得要死,只要把數據丟進去後,跟着操作,然後依照實際所得TDS值去做修正就可以了。原則上Extraction=18~22%, TDS=1.3~1.6%都是可接受的區間。</p> <p> 通過實驗發現Clover的衝煮,由於以前概念上的偏差,使用過多粉量,而造成光靠拉高TDS提升咖啡強度,卻忽略掉了萃取率的表現,而使咖啡都落在發展不足且濃郁(Strong/Underdeveloped; TDS=1.7,Extraction=11%))區間內。這樣的煮法,除了浪費咖啡粉外,造成的萃取率不足,反而讓產區風味不明顯的問題。當務之急,就是採用建議的粉量來找尋新的研磨、萃取時間,和濾網網目。假如把營業考量產能列入考量,我無法使用Gold Cup建議的四分鐘來沖泡咖啡,因此必須要將研磨度調細,來縮短沖泡時間。此外,粗濾網(70 micorn)比起細濾網(100micorn)來,反而更適合衝煮Gold Cup。</p> <p> 在軟件的輔助下,萃取參數大概花了一個晚上就得以整理完整,包括中、淺、深焙咖啡的衝煮設定等。當然,你可以不鳥這套金盃模式,但是我在杯測金盃咖啡後,發現比起我之前衝煮的咖啡有幾點顯著差異:</p> <p> 1. 產區風味更明顯</p> <p> 2. 甜度變高</p> <p> 3. 乾淨度變高</p> <p> 4. 喉韻拉長</p> <p> 接着,有趣的是,我把掛耳包的粉量丟入軟件中,依照建議的水量(200cc)來衝煮,卻很巧合的得到Gold Cup的Extraction=20%和TDS=1.3%的組合,這是我所沒有預料到的。</p> <p> 在原理髮明的五十年後,才認真地探討gold cup的原理並也運用在店內,是一件很對不起我的咖啡和客人的事情。我承認很多時候口感應該纔是流程製作的最後決定關鍵。但是,有時候因爲忽略掉了既存的科學原則提供給我們的便利,使摸索過程中,增加了續多痛苦和未知。這個軟件,讓我重新認識Gold Cup的運作原理,也因爲軟件的便利性,讓我可以將現有的流程進行調整,提供mojocoffee的愛好者更接近完美的咖啡。</p> ' |
