在WCE世界盃咖啡大賽勇奪冠軍的賴昱權,13年來鑽研各種咖啡技巧與知識,從打工的吧檯手、自行創業、赴美取經,一路超越巔峯,只爲追求理想中的味道。近日他將這段心路歷程寫成《當命運要我成爲狼》一書,分享他的烘培人生與哲學。</div>

“狗能幫你拉雪橇,狼卻可以幫你找到獵物,我是狼。”爲了追尋咖啡夢,賴昱權曾花光所有積蓄,又以新人之姿挑戰擁有咖啡界奧運之稱的大賽並獲得冠軍,有人以爲他是幸運,卻沒有看見他十多年來下的刻苦功夫,“對我來說,獵物就是理想,一旦咬住我就不放,不斷進攻我的夢。”</div>

自稱是“蕭狼(臺語的狂人)”的賴昱權小時候成績不好,是全班最後一名,與咖啡的相遇,來自就讀雲林環球科大期間,陪伴同學前往在古坑華山的咖啡廳面試,竟意外獲得老闆青睞,得到打工機會,奠下咖啡烘培、烹煮與管理服務的實務基礎。</div>

賴昱權坦言,一開始覺得泡咖啡只是很帥,後來竟深深著迷咖啡的一切。“大學4年來,我每天往返於住家、學校和咖啡廳之間,得翻過兩個山頭、來回超過50公里、車程近兩小時,卻一點都不感覺到苦與累。”</div>

大學畢業後,賴昱權繼續留在華山一年,後來他又在連鎖精品咖啡店任職,4年內在臺北、臺中、臺南各地展店、開疆闢土。某次,賴昱權偶然在一家店喝到美國咖啡大師George Howell烘培的咖啡,讓他渾身起雞皮疙瘩,“當下我想,這麼神奇的烘豆技巧,我一定要到美國跟他討教!”</div>

賴昱權馬上訂機票,赴美向大師學習,雖然這趟學習之旅花光他一切積蓄,卻也促發他自行開店的決心,在陌生的高雄頂下店面,賴昱權坦言,“前半年,我一直是無薪工作,一年後生意才漸漸有起色。”</div>

經過世界咖啡大賽的洗禮,賴昱權仍堅持每天烘豆子練習,然而過去獨自一人追尋的夢想,現在卻有了團隊。賴昱權說:“我知道,我一定不是臺灣最優秀的烘培師,但在國際的舞臺上,我卻代表臺灣的咖啡魂,不能輕言放棄!”</div>

烘豆間裏,咖啡豆發出第一聲些微的爆裂聲響,烘焙接近尾聲,整個空間瀰漫著咖啡香。專注烘豆的賴昱權,撥開豆子檢視香氣是否到位,同時也挑出不合格的豆子。</div>

午間造訪這位2014 年WCE世界盃咖啡大賽“烘豆項目”冠軍的賴昱權,就在他所開設的“握咖啡”咖啡店。彷佛科學實驗室般,牆上寫滿看似數學公式般的算式,是賴昱權與夥伴分析咖啡豆,測試出最佳的烘焙手法和時間,作爲烘豆依據。</div>

“烘焙之於咖啡,就如同‘翻譯’,烘焙體現咖啡最好的風味”,這是賴昱權對烘焙這道程序的詮釋,同時也不吝傳授烘焙咖啡的關鍵技巧,就是不宜有生、澀、苦、焦這4個味道。</div>

“喝咖啡,可將就、也可講究!”賴昱權直指,先學品味咖啡,纔來研究咖啡。賴昱權窮其所學和全付精力烘製出極講究的好咖啡。例行每2天烘豆一次,每次8小時,他投入這行所付出的堅持和紀律,超乎想像。</div>

端出一杯滋味豐富的咖啡背後,賴昱權下足苦功,2014年,他獲得了WCE世界盃咖啡大賽烘豆項目冠軍,還身兼SCAE歐洲精品咖啡協會烘焙訓練講師、美國精品咖啡協會認證咖啡杯測量評審,以及國際咖啡品質鑑定師等專業判斷力。爲送到消費者手上的咖啡把關,從咖啡的前味─磨成粉時和浸水後的味道;喝下咖非的芳香與入喉的後韻,細細品味咖啡細膩的果酸、醇厚的脂感、咖啡液的香氣以及味覺酸甜平衡等諸多條件。</div>

咖啡從產地到消費者手上,歷程很長,從生豆、對咖啡風味的感官、烘焙、研磨到衝煮,每個環節都環環相扣。</div>

賴昱權談起,他偏愛果酸豐富的埃塞俄比亞咖啡豆。他說,咖啡若少了果酸味,就像少了靈魂般。他指出,臺灣人並不習慣咖啡的酸味,但當他向客人解說咖啡的果酸味,對品味咖啡的重要性後,已經有越來越多的客人接受,讓他更樂於與愛好者分享。</div>

2015年2月,賴昱權以COACHEF品牌進軍商務豆市場,廣受好評;今年5月他將推出掛耳式濾泡咖啡,並在國內連鎖超市上市。咖啡專業做後盾,賴昱權悉心烘製出咖啡的美好風味。</div>
