很多地方為了能夠檢測到豆子的品質與特性,都會使用杯測來進行品質的檢驗。但相信很多小夥伴都會感到好奇,明明手沖這樣的萃取方式能夠更好的沖出咖啡的風味,那為什麽不用手沖來代替杯測進行檢驗呢?
為什麽不以手沖來代替杯測呢?
其實這個道理很簡單,手沖和杯測之間的區別就在於人工幹預的程度,以及便捷性。從杯測誕生之初我們就能夠獲得這個問題的答案。
杯測(Cupping)誕生於1980年的美國,它最早是應用在咖啡豆的貿易上!咖啡商為了防止購置的咖啡豆裏含有重大瑕疵味道,於是便通過抽樣進行萃取調查。但奈何抽樣調查的數量過於龐大,如果采用手沖或是其他的萃取方式,一來耗費的時間將會十分漫長,二是無法確保沖煮人員能夠發揮出一致的水平進行沖煮,讓豆子展現出原本的特性。因此,就需要一個快速、便捷,且人為影響最小的方式來萃取咖啡。然後,杯測就在這樣的背景下,誕生了。
通過加水直接對咖啡粉進行浸泡,不僅能夠減少批量操作的時間,同時也可以去除人為手法幹預的影響,由此更好的喝到豆子原本的風味,這是最初選擇采用杯測的目的。
然後,隨著時代的發展,杯測的應用不再僅限於貿易雙方,各大咖啡相關的競賽、鑒定、研究等都會采用杯測來對咖啡豆進行檢測。因為對於所有人來說,杯測確實是評估豆子質量,定製各種方案(沖煮、烘焙、拼配等)的最好途徑。
當然啦,我們自己在家也可以嘗試一下杯測流程。杯測不僅能夠幫助我們更好的感受到咖啡豆本身的味道,還能對品鑒咖啡的能力有一定的提升。所以接下來前街就跟大家分享一下,杯測的具體參數及流程吧!
杯測參數
杯測的萃取參數是有一個統一的標準,所有杯測都會使用以下這個參數進行。
使用粉量:根據你使用的杯測碗大小決定
粉水比例:1:18.18
研磨程度:20號篩網的75%過篩率
使用水溫:94°C
使用水質:TDS75~250ppm
浸泡時間:4分鐘
品鑒方式:啜吸
除了杯測用的碗和勺子以外,我們還需要額外準備兩杯清水,以及紙巾。清水用來洗涮勺子,紙巾則用來吸幹水分~
杯測流程
一、研磨咖啡粉
杯測的第一步是研磨咖啡豆,然後將研磨好的咖啡粉倒入杯測碗中。但因為我們需要聞取咖啡粉的幹香氣,所以在研磨完成後,我們並不能立刻對咖啡粉進行註水浸泡,而是先感受它散發出來的香氣,再註水。
需要註意的是,咖啡的香氣具有揮發性,所以在杯測嗅聞幹香時,最好將時間控製在十分鐘以內,並且在不聞的時候,最好使用任意物品蓋住粉碗,減少空氣的接觸。
二、註入熱水
當幹香確認完畢之後,我們就可以進行註水啦。如果你有專業的杯測碗,那麽就不需要用到電子秤來計量水量,只需要倒入推薦的粉量,然後註滿熱水即可~(一定要記得,註水的時候需要同時按下計時)。在等待的4分鐘時間裏,我們可以聞取咖啡的濕香氣。
三、破渣
當四分鐘時間到了以後,我們就可以開始破渣啦!使用杯測勺在液面推動三下即可(從後往前推)。這一個動作能夠將咖啡粉盡量集中在角落的邊邊,給下一步的撈渣做足準備。
四、撈渣
破渣和撈渣是連貫進行的!在破渣過後,我們再掏出一把杯測勺,然後將咖啡粉進行「圍剿」,撈出。而在撈完一次渣以後,我們需要對杯測勺進行沾水清洗,再用紙巾吸幹附著於勺子上的水漬,避免串味、稀釋的情況發生。
五、品鑒
撈渣完畢後,只需要等待一分鐘就能夠開始我們的品鑒啦~使用杯測勺舀取一勺咖啡液,然後送入嘴邊,通過啜吸的方式將其吸入。(啜吸可以將送入嘴裏的咖啡液迅速降溫、霧化,這樣咖啡的風味能夠更好的被我們所感知~)同樣,喝完以後記得將勺子沾水清洗,用紙巾吸幹水分,防止串味情況的發生~

三角杯測是一種感官測試,可以看看一個人是否能區分出兩種不同的咖啡。在三角杯測中,你要從三個樣品中找出不同的那一杯,而這三個樣品稱為三元組,兩杯是相同的咖啡,有一杯是不同的。前街上面提到的杯測全套流程是為了全面且客觀地感受豆子表現的特征,所以需要全程記錄下咖啡在不同階段的香氣與口感,而三角杯測的目標是找出不同的那杯就行,不一定需要說出差異在哪兒。
