左手握咖啡杯，右手提拉花缸，將杯子傾斜約15°，在一個固定的地方倒入少許奶泡。然後把杯子抬高2-3釐米，澆出一個花朵的形狀，手腕來回晃動拉花缸，形成一圈圈葉子圖案……9月14日，在成都Creator Coffee（創造者咖啡）體驗店，曾獲得2015 WLAC世界拉花大賽亞軍的王學超，正在耐心地爲學員講解、示範咖啡拉花技巧。</div>

其實，在2011年之前，王學超還不懂咖啡。從咖啡拉花的“門外漢”到世界一流水平，王學超靠的是刻苦練習，“每天做幾十杯咖啡拉花，把每一杯都按照比賽的要求去完成。”□文莎</div>

以拉花缸爲筆恣意揮灑</div>

26歲的王學超，是成都蒲江人。2010年，他從福建某武警部隊退役之後，在重慶一家咖啡培訓機構做後勤採購。當他看到培訓班老師教學員咖啡拉花，輕妙的動作，嫺熟的手法，最後呈現出意式咖啡的華麗美觀，產生了濃厚的興趣。於是，他白天完成工作後，晚上在培訓教室自學咖啡拉花。</div>

一開始，王學超往咖啡杯注入奶泡時，很難控制手腕的力道。他總是慢慢注入，這種“擠牙膏”方式拉出的圖案，要麼不成形，要麼不精緻。</div>

經過一年的苦練，王學超逐漸領悟到：“咖啡師如同書法家，是以拉花缸爲筆，只有放鬆，才能恣意揮灑。”他認爲，書法家在行筆時，有自己的筆風；咖啡師做拉花時，也要有自己的風格。</div>

王學超格外注重拉花圖案的對稱美，“像拍照有黃金分割線一樣，拉花要講究空間感和工整對稱。”在拉花時，他首先要根據咖啡杯口徑大小決定拉什麼樣的圖案，口徑越大，圖案越複雜；口徑越小，圖案越簡潔。其次，爲保證圖案的對稱，需要準確把握奶泡注入量以及搖晃拉花缸的幅度。</div>

手術縫合線沒拆就上賽場</div>

從2011年至2015年，王學超參加了10多場有關咖啡師、咖啡拉花的比賽。“通過參加比賽的方式，能得到來自評委的專業意見，還能與同行交流切磋，這個過程讓我進步很快。”王學超說。</div>

王學超自稱是“成長型”選手，總是越挫越勇。他記得2013年參加WBC世界咖啡師大賽重慶賽區選拔時，自己竟然意外打碎了杯子，沒能獲得名次，但他並沒有輕言放棄。2014年，他報名參加了WLAC全國咖啡拉花大賽，拿到了第6名。經此一役，他決定把重心轉移到咖啡拉花上，“我相信自己可以在咖啡拉花上更進一步。”</div>

2015年，王學超報名參加WLAC世界拉花大賽。不料，在比賽前夕，他病倒了，緊急住院，還做了氣胸手術。眼看比賽日期越來越近，王學超的內心既掙扎又不甘，雖然家人極力勸阻，但他還是決定繼續參賽。去上海蔘加中國賽區總決賽時，他胸前的縫合線都還沒有拆除。“但是一到賽場，完全就投入進去，感覺不到傷痛。”王學超說。</div>

最終，王學超不負衆望，一舉奪得中國賽區第一名，並獲得唯一的名額徵戰在瑞典舉辦的總決賽。在瑞典，他與來自50個國家的咖啡師同臺競技，以一杯名爲“鳳凰涅盤”的創意拉花獲得亞軍。“生病之後，我就想詮釋一種生活態度，人生要有像鳳凰一樣浴火重生的勇氣。”王學超說。</div>

拉花祕訣就是“不停地重複”</div>

2017年2月，王學超回到成都，在成都花牌坊開設一家咖啡體驗店，不僅售賣咖啡，還增設咖啡製作、意式咖啡的萃取與製作、咖啡藝術拉花等培訓項目。“我想把更多專業的東西分享給願意從事咖啡拉花工作的人。”王學超說。</div>

如今，向王學超拜師學藝的人來自全國各地，以“90後”爲主，最大的有“50後”，最小的有“00後”。王學超表示，爲了保證教學質量，一個班只招收3個學生，手把手教學。一些學員因爲一時半會兒難以掌握咖啡拉花的技巧，而變得有些灰心喪氣，王學超總是“勤能補拙”和“天道酬勤”來勉勵學員，並告訴他們，“只有不停地重複，你才能拉出漂亮的圖案。”</div>
